Been vacationing over the summer and out of the garden (thank goodness for automated watering systems!) but this week I made salsa. I mean, what else does one do with fresh tomatoes, onions, peppers and cilantro? They make salsa!
Unfortunately, my tomatoes took a beating during our week of thunderstorms. While I might have found the cure for blossom-end rot, splitting skins is something only a greenhouse can prevent. Constant moderate watering is the key with tomatoes, gradually increased as they set blossoms and begin to produce fruit. Once it’s time for harvest, back off on the water to avoid splitting. As you can imagine, torrential downpours are not helpful to this cause. But not one to argue with Mother Nature (learned my lesson years ago), I chose to toss out the bad and focus on the good. 🙂
They are gorgeous, aren’t they? Not enormous in size but certainly tasty. Combined with my hot peppers and onions they’re all the more delightful. As you know, my sweet onions have been ready for some time and my cilantro, well, let’s just say the heat forces bolting much too soon. Translated: I did have to resort to store bought cilantro for this batch of salsa.
Sad, but we must deal in reality.
Anyhoo, salsa is wonderfully easy to make. Simply chop your ingredients and mix together along with a tablespoon or so of lime juice. Lemon will do in a pinch. For my salsa, I used about 3 tomatoes, 1 onion, 1 jalapeno, 1 cayenne pepper and a tablespoon of chopped cilantro which turned out a not-too-spicy salsa for the hubby and crew. It was Father’s Day and my husband enjoys his salsa and chips.
Not bad for tasty garden treat!
