Strawberry Goat Cheese Salad

This salad is the perfect jump on spring.  Strawberries are bursting from the vine, plump and juicy and this recipe gives them center stage.

When combined with a mix of velvety soft buttercrunch and crispy firm spinach leaves from the garden they make for the most delectable lunch.  The secret to this salad’s appeal is the striking contrast between tangy berry and sweet goat cheese.  It’s melt in your mouth good!

Strawberry Goat Cheese Salad

fresh from the garden buttercrunch and spinach leaves, washed and dried

4 strawberries, washed and stems cut

1 TBSP goat cheese

organic olive oil

balsamic glaze

fresh ground pepper

Combine lettuce and spinach in your favorite salad bowl.  Slice strawberries and drop over greens.  Drizzle your preferred amount of olive oil over top, swirl a round of balsamic glaze, then sprinkle with goat cheese.  Finish with freshly ground pepper and enjoy!

Ingredients
