My garden potatoes are bursting from their beds…
Bursting with joy as spring finally arrives! They’re gorgeous, aren’t they? Those are baby okra plants in a line next to them. As I harvest, my okra will conveniently take over the bed when the potatoes are gone!
And all are quite content. After surviving a few frosts, these girls are happy. These plants are a mix of white and red varieties and are ready for harvest. Woohoo!
Harvesting is a simple matter of gently digging through the dirt, more of a probing, as you don’t want to scratch the papery outer skin, finding the little beauties and then rinsing them well. Commonly referred to as “swimming for potatoes,” kids LOVE this activity. Just be prepared to wash their garden gear as they do tend to get very involved in this process. Oh, and be sure they wear gloves. You never know what they might run into underground!
There’s nothing better than fresh from the garden potatoes. They’re buttery and creamy and unlike anything you’ll get at the grocery store. Some of my favorite ways to consume them are roasted, alone or with other garden vegetables.
I might roast them with fresh rosemary and sweet onions, or bake the potatoes with cabbage and carrots.
Either way, garden potatoes are a treat. And my 2018 crop is stupendous!
