Peppers Add Color to Your Dinner Plate

Not only do peppers make a colorful addition to your dinner plate, they contribute a host of healthy vitamins and antioxidants. I grow the green variety in my garden and like to eat them fresh, or simmered in a pot of black beans or Picadillo. I wish I could grow red and yellow, but I haven’t managed to conquer that feat quite yet. Besides, my green peppers usually get plucked from the vine before they have time to ripen to red. But even if you can’t grow a rainbow of colorful peppers, it doesn’t mean you can’t enjoy them. (Thank you farmer’s market friends!) Gardeners do like to share.

And if you’re looking for new and fresh ways to consume peppers, try this stuffed pepper recipe. It’s easy to make a pretty good. Even the kids will enjoy it!
