Vegan Brownie Bites

If you like chocolate in brownies, but none of the sugar or unhealthy fats, then this recipe is for you. Made from a base of walnuts, cocoa, dates and coconut, this is sweet treat is a dream.
Ingredients
  • ½ Cup Walnuts (or Pecans)
  • 2 TBSP of unsweetened shredded coconut
  • ½ Cup of Medjool Dates pitted
  • 2 TBSP of raw Cacao Powder
  • ¼ tsp of pure Vanilla extract
  • ¼ tsp of cinnamon
  • 2 tsp honey (optional: for sweeter, denser brownie bites)
Instructions
  1. Place the nuts in a food processor and blend until almost a flour consistency.
  2. Add the remaining ingredients and process until the mixture forms a dough-like consistency.
  3. Using your hands, take a small amount and roll into a ball.
  4. Can be stored in the refrigerator for several days.
Notes
If you like the dark or bittersweet chocolate, omit the honey. If you like dense, decadent brownies like me, add it!
