Vegan Brownie Bites

These brownie bites are not only easy to make but totally healthy. You can pack them in your child's lunch for an extra treat with none of the extra guilt.
Ingredients
  • ½ Cup Walnuts (or Pecans)
  • 2 TBSP of unsweetened shredded coconut
  • ½ Cup of Medjool Dates pitted
  • 2 TBSP of raw Cacao Powder
  • ¼ tsp of pure Vanilla extract
  • ¼ tsp of cinnamon
  • 2 tsp honey (optional: for sweeter, denser brownie bites)
Instructions
  1. Place the nuts in a food processor and blend until almost a flour consistency.
  2. Add the remaining ingredients and process until the mixture forms a dough-like consistency.
  3. Using your hands, take a small amount and roll into a ball.
  4. Can be stored in the refrigerator for several days.
Notes
The addition of honey lends a sweet denseness to these brownie bites that I adore. If you prefer your chocolate less sweet, much like a flourless chocolate torte, then leave out the honey. Both versions of this recipe are delicious!
