Carrot-Cranberry Salad

This ultra-healthy salad is the perfect accompaniment to any picnic or patio meal. Light and refreshing, it has none of the heaviness of traditional carrot salad. And its vegan friendly!
Ingredients
  • 3 cups shredded carrots
  • ⅓ cup craisins (dried cranberries)
  • ⅓ cup finely chopped apples
  • 1½ TBSP olive oil
  • 1½ tsp white wine vinegar
  • 1 tsp honey
  • 1 tsp orange zest
  • 1½ TBSP chopped walnuts (optional)
Instructions
  1. Place shredded carrots in a medium sized bowl.
  2. Add cranberries, apples and walnuts.
  3. Combine olive oil, white wine vinegar and honey and mix well.
  4. Add vinaigrette to salad and toss well.
  5. Serve immediately or chill.
