Stuffed Pepper Poppers

This dish is a definite crowd-pleaser mixing Italian sausage with hot peppers and/or sweet peppers.
Ingredients
  • 15-20 peppers, jalapeno or sweet, sliced in half lengthwise, seeds removed
  • 1 lb. mild Italian sausage
  • ¼ cup minced red pepper
  • ¼ cup minced red onion
  • 3 TBSP minced garlic
  • 1 package of softened cream cheese
  • ¼ cup Parmesan cheese
  • salt/pepper to taste
  • ½ cup mozzarella cheese
  • ½ minced jalapeno, seeds removed (optional)
Instructions
  1. Preheat oven to 350 degrees.
  2. Brown sausage, peppers, onions, garlic and minced jalapeno.
  3. Drain grease and add softened cream cheese, Parmesan, salt/pepper and mix well.
  4. Line baking sheet with nonstick foil or parchment paper.
  5. Place approximately 1 TBSP of mixture into each pepper half and top with ½ tsp mozzarella cheese.
  6. Place the tray of peppers into the oven and bake until cheese is melted.
  7. Sprinkle a bit of Parmesan over top before serving.
Notes
I use a mix of pepper varieties for this recipe, because I find "some like it hot" while some "not!" These sweet peppers are not your bell pepper variety, but appear more similar to the jalapeno and can be found in your produce section sold by the bag (usually tri-color).
