It’s harvest time for my carrots and that means loads of produce looking for some way to be consumed. You see, carrots are easy to grow and one of the healthiest options on the menu. However, in my household, everyone likes their carrots served up differently. My son prefers them raw, with or without an added dipping sauce of ranch dressing.
Carrot Sweets
My daughter has a sweet tooth, so she likes her carrots hidden in cake. My husband will eat them shredded in salad, and stewed alongside a lovely chicken or pork butt. I like them squeezed into juice (or mixed with oatmeal in the form of cookies!). Talk about healthy and delicious, my Oatmeal-Carrot Cookie recipe is AMAZING. One thing we all can agree upon in my family is that we’re open to trying new things. With limited parameters, of course. And while I’m probably the only one that would try a carrot hummus, my kids will look the other way when I toss a few carrots into an acai bowl. I personally find the acai to be a wonderful berry. Not only healthy, its dark color and strong flavor can disguise most anything you toss into the blender with it. Genius!
Healthy Recipes
And it makes for a super healthy breakfast. Harvesting fruit this spring? Why not freeze it and make your own version of a healthy breakfast bowl. If not, you can always head to the market. Strawberries and blueberries are in season and are wonderful staples for any frozen fruit bowl. Add some chopped kale, spinach, banana, mango, pineapple, grapes, apple–you name it, they’re all good. You can even purchase bags of frozen fruit/veggie blends at the supermarket. These days they come in all sorts of flavors and combinations. Top with a protein-based granola and you’re golden.
