This time of year in Florida, I have cabbage coming out my ears. Red cabbage, green cabbage–plus all of the other brassica family members. It’s the last hurrah before warm weather sets in eliminating this family of plants from the beds of my garden.
But I’m not complaining. Cabbage is awesome and delicious. In fact, you’ll find several recipes using it on this website. Plus, it’s mega-healthy. Easy to grow, good to eat. Win-win!
Asian-Inspired Slaw
The perfect salad for any dish.
Like most slaws, this recipe is super easy to make. All it requires is fresh chopped ingredients and you’re done. Seriously. That’s it. Best of all, it’s easily modified. Try adding fresh ginger to the mix, or fresh radish instead of garlic for that delicious kick. It’s all good!
Ingredients
1 cup green cabbage, coarsely chopped
1 cup red cabbage, coarsely chopped
1 scallion, diced
1 carrot, shredded
1 clove garlic, minced
Juice from 1/2 lime
1/4 cup extra-light olive oil (optional sesame seed oil)
1/4 tsp red chili pepper flakes
1/4 tsp powdered ginger
Several dashes black pepper
Directions
- Combine all ingredients and mix well.
- Serve immediately.
- Chill leftovers (If you have any!).
