Love At First Bite

With the recent cold dips in temperature, I’m reminded of what comfort food is all about. Easy, especially when you have a husband who constantly reminds you. “I don’t eat fish when it’s cold outside. Fish is a summer food.”

Hmph. Has the man never tasted a wonderfully warm and succulent pan-seared dolphin with jambalaya? I mean, seriously. We just celebrated Fat Tuesday, a day for pancakes and all things crazy. But Mardi Gras was so yesterday and I’m sitting at the dinner table with a family looking for comfort.

What do I serve? For starters, we think of chicken soup during the cold snaps. It’s the only time I make it and I do so from scratch using carrots from my garden. I’d use the sweet onions from my garden, but they aren’t ready for harvest and celery is not on my to-grow list. We simply don’t eat enough of it. But I do have kale so I toss in a few leaves and dive in heartily.

Next up is my Savory French Onion Soup. This is one of my all-time favorites. It’s easy to make though it tends to take a bit of time. And what good soup doesn’t? Definitely worth a try for your family.

While we’re on the topic of onions, how about Onions Au Gratin? This one is a spinoff of the French Onion Soup and worth every ounce of effort. Again, I must use grocer onions because mine won’t be ready until April. Wah.

For dessert, I’m heading for the Butterscotch Cookies. Found this recipe while perusing some of my cooking magazines and had to share. The butterscotch flavor screams comfort and the soft melt-in-your mouth goodness backs it up.

Carrots: My New Favorite in the Kitchen

My carrots are on their way out–actually have been for quite some time. Planted in the fall, these beauties have been hanging out for a while “in ground” until I summoned a need for them. Mind you, it’s supposed to be a little over 2 months to harvest, but as with all things in the garden, there is leeway. Lots.

If your carrots aren’t getting enough water, they might take an extra month. If they aren’t getting enough food, same idea. My carrots are very tolerant when it comes to these things because they have to be; I’m their gardener! But it’s not that big of a deal, really. I mean, over Easter we harvested a bunch of carrots and made carrot cake. A couple of weeks later we harvested a bunch for carrot soup, and they were all good. Some were a bit small due to overcrowding (not enough “hair cutting” on our part), but once we cut the greens off and cleaned the skins, we plopped them into a food processor and came up golden. 🙂

So, since we like to experiment with our garden harvest, we tried carrot soup. Sampled some during a Mother’s Day luncheon and it was so delicious, I had to try my hand at making a bowl of my own. The results were mixed within the family–I loved it, my husband tolerated it, my son thought it tasted like curry and my daughter wrinkled her nose. Carrots aren’t her fave. More

Comfort Food From the Garden

With the recent cold dips in temperature, I’m reminded of what comfort food is all about. Easy, especially when you have a husband who constantly reminds you. “I don’t eat fish when it’s cold outside. Fish is a summer food.”

Hmph. Has the man never tasted a wonderfully warm and succulent bourbon-glazed salmon? I mean, seriously. That’s what I call some comforting food. But I’m not the only one sitting at the dinner table so one must take others into consideration. In light of this fact, I’ve managed to whip up some wonderfully comforting foods that will please even those from the north (who expect their bellies to react to changing temperatures).

First on the list is Savory French Onion Soup. This is one of my all time favorites and with the recent addition of sweet onions to my garden, a must-eat on the fall grocery list. It’s easy to make though it tends to take a bit of time. And what good soup doesn’t? My daughter is a HUGE fan of this soup and she’s pretty fussy. (Gets it from her momma.) Worth a try for your family.

Last post I mentioned Baked Sweet Onions but have you ever thought to combine them with cabbage? Sautéed Cabbage and Onions is a real treat, one my husband particularly enjoys.

For a tropical flair on comfort, how about Chicken and Yellow Rice with Black Beans?

It’s not at all difficult to prepare and the taste is out of this world. Talk about filling with comfort, this is one meal I will stuff myself to the seams and enjoy every minute. But then again, I’m from Miami and LOVE all things Spanish. Ever heard of Ottmar Liebert? Great flamenco guitarist.

Cooking Up Some Comfort Food

Not that we need comfort food in Florida this time of year, but it is practically St. Patrick’s Day and with that comes corn beef and cabbage.  Corn beef and cabbage?  Yum.  Count me in!

In my opinion, the best part about this dish happens to be the cabbage.  Not only does it come from garden this time of year–always and added plus–it takes on a whole new personality when sautéed with sweet onions.  Granted my sweet onions aren’t ready yet (still “bartering” with gardeners from other parts of the world at the moment for my onion supply), but thank goodness for the grocery store, right?  I mean, I don’t raise beef, either but it doesn’t prevent me from enjoying the taste every now and again.

Back to my cabbage.  This is one of my husband’s favorites.  Born and raised in Ohio, his family has been making this comfort food for years.  But being from Miami, I never heard of it until I met him.  We ate mangos and plantains, fried chicken and grits.  (That’s what happens when you transplant a Georgia family to South Florida–cra-zy!)  All good food and comforting to a degree, but this dish has fast become a favorite of mine, too.   How can you not like a dish with three simple ingredients?

It’s perfect.  The only challenge comes in the fact that you have to “work” this dish and by that I mean actually stand stove-side and stir, flip, rotate–you know, cook!  That’s where I tend to have issue.  What requires a golden butter brown saute ends up caramelized quickly in my kitchen.  I could blame it on the high heat of my electric stove (real cooks use gas) or the fact that I multi-task while cooking.  Who can ignore the buzzer on a dryer full of warm wrinkle-free clothes?  Not me!

But truly it’s all good.  My cabbage dish turns out sweet and delightful and more importantly–edible.  Never good to mess up hubby’s favorite dish (if you know what I mean) so I do try to pay attention and caramelizing is a good thing.  If it works for French onion soup, it can work for cabbage and onions.  And just look at these results.
