If you’re a chocolate lover like me, you probably crave a sweet bite of cocoa throughout the day. I know I do. But who needs the sugar? Who needs the extra fat? Certainly not me. Well, let me introduce you to a fabulous recipe for vegan brownie bites that will satisfy any sweet tooth. Any healthy sweet tooth, that is. Full disclaimer: these will not fake you out for the real thing. But they are good and they are healthy–high in dietary fiber and a generous amount of omega-3 and vitamins.
This kid-friendly recipe for Vegan Brownie Bites was created by Debbie Waddell and shared with me by the World Wellness Education group for my upcoming School Garden Farmer’s Market. After all, we’re always looking for new ways to get our kids to eat healthy, aren’t we? Here’s a good start!
The base is made of walnuts, dates, coconut, plus a dose of cacao powder and vanilla extract. The secret is blending them together to create a “dough,” beginning with the walnuts. I used a countertop mini food processor, same as I use for my acai bowls. It works like a dream and produces results! Walnut flour anyone?
The same holds true for the dates and coconut flakes. Blend well, that’s the key. The final outcome tastes like a flourless chocolate cake. For those like me, who like their sweets a bit sweeter, I’d advise the addition of honey. It really packs in the flavor and creates a dense, decadent consistency. Enjoy!
- ½ Cup Walnuts (or Pecans)
- 2 TBSP of unsweetened shredded coconut
- ½ Cup of Medjool Dates pitted
- 2 TBSP of raw Cacao Powder
- ¼ tsp of pure Vanilla extract
- ¼ tsp of cinnamon
- 2 tsp honey (optional: for sweeter, denser brownie bites)
- Place the nuts in a food processor and blend until almost a flour consistency.
- Add the remaining ingredients and process until the mixture forms a dough-like consistency.
- Using your hands, take a small amount and roll into a ball.
- Can be stored in the refrigerator for several days.
