Need something to do with your cucumber harvest? How about getting creative and preparing cucumber soup? It’s fresh clean taste sweetened ever so slightly is the perfect accompaniment to any summer meal. The kids and I made this with the cucumbers from our school garden and each student tried some. Most loved it!
Chilled Cucumber Soup

This simple soup is both delicious and healthy. Light and fresh, it's the perfect accompaniment to any summer meal.
Ingredients
- 4 - 5 cucumbers, washed and peeled (and seeded for you purists!)
- 1 small onion
- 8 oz. plain or vanilla yogurt
- 10 leaves stevia
- 2 cloves garlic
- 1 tsp lemon juice
- 2 dashes of cayenne
Instructions
- Using a blender, start with cucumbers, onions and yogurt and puree all ingredients together until blended smooth, adding stevia garlic, juice, and cayenne toward the end.
- Chill for at least 2 hours prior to serving.
- Garnish with stevia leaves and serve cold.
