Chilled Cucumber Soup
Need something to do with your cucumber harvest? How about getting creative and preparing cucumber soup! It’s fresh clean taste sweetened ever so slightly is the perfect accompaniment to that summer meal. We made this with the cucumbers from our school garden and each student tried some–most loved it!
4 – 5 cucumbers, washed and peeled (and seeded for you purists!)
1 small onion
8 oz. plain or vanilla yogurt
10 leaves stevia
2 cloves garlic
1 tsp lemon juice (we used lime because lemons were nowhere to be found in our fridge)
2 dashes of cayenne
Using a blender, start with cucumbers, onions and yogurt and puree all ingredients together until blended smooth, adding stevia garlic, juice and cayenne toward the end. Chill for at least 2 hours prior to serving. Garnish with stevia leaves and serve cold.
