Sautéed Eggplant

This eggplant recipe is wonderful on its own, but can also be incorporated into a lasagna dish as well.
Ingredients
  • 1 large eggplant, sliced lengthwise about ¼" thin slices
  • 1 egg
  • ¼ cup milk
  • Italian-style bread crumbs
  • salt & pepper
  • 1 TBSP olive oil
  • 1 TBSP butter
  • ½ cup of your favorite tomato sauce
Instructions
  1. Slice the eggplant and set out to dry on paper towels.
  2. Combine egg and milk and whisk briskly.
  3. Add salt and pepper, to taste. Place bread crumbs in a bowl.
  4. After eggplant dries for approximately 15 minutes, immerse slices in egg mixture until both sides are saturated, then coat in bread crumbs.
  5. Heat olive oil and butter over medium heat.
  6. When butter bubbles, sauté coated eggplant slices until golden brown, about 3-4 minutes a side.
  7. Drain on a plate covered with paper towels.
  8. Serve warm.
  9. Optional: Sprinkle with Parmesan or Mozzarella cheese or layer in lasagna
