This simple soup is both delicious and healthy. Light and fresh, it's the perfect accompaniment to any summer meal.
Ingredients
4 - 5 cucumbers, washed and peeled (and seeded for you purists!)
1 small onion
8 oz. plain or vanilla yogurt
10 leaves stevia
2 cloves garlic
1 tsp lemon juice
2 dashes of cayenne
Instructions
Using a blender, start with cucumbers, onions and yogurt and puree all ingredients together until blended smooth, adding stevia garlic, juice, and cayenne toward the end.
Chill for at least 2 hours prior to serving.
Garnish with stevia leaves and serve cold.
