Chilled Cucumber Soup

This simple soup is both delicious and healthy. Light and fresh, it's the perfect accompaniment to any summer meal.
Ingredients
  • 4 - 5 cucumbers, washed and peeled (and seeded for you purists!)
  • 1 small onion
  • 8 oz. plain or vanilla yogurt
  • 10 leaves stevia
  • 2 cloves garlic
  • 1 tsp lemon juice
  • 2 dashes of cayenne
Instructions
  1. Using a blender, start with cucumbers, onions and yogurt and puree all ingredients together until blended smooth, adding stevia garlic, juice, and cayenne toward the end.
  2. Chill for at least 2 hours prior to serving.
  3. Garnish with stevia leaves and serve cold.
